We all gravitate towards warm, cozy meals for the cold seasons. This cozy, crustless chicken pot pie is an easy and quick meal that will fill your bellies and enhance passion and love energies around you and your home.
Gluten-free and can be made dairy-free as well, this is a meal in rotation currently. Our boys love it, and it definitely brings a sense of home, comfort, and love into the dining room when we eat together. And I’ll be honest, a way to a partner’s heart is through their stomach couldn’t be more true with this recipe. I’ll boast about the extra googly-eyes and winking after we eat this one. After you make this, you may be in for some extra swooning.
Let’s get right down to it! And read to the end for an even spicier incantation for when you’re stirring in the herbs!
Ingredients
Note: You can absolutely use rotisserie chicken from a grocery store, pre-cooked, to make this easier. Also fresh herbs are great as well. I would think a few sprigs of thyme and rosemary would do the trick.

- 2-2 1/2 lbs chicken breast, shredded
- 2 – 3 stalks celery, chopped
- 2 – 3 large carrots, chopped
- 1 sweet onion, diced
- 2 tbsp cornstarch or gluten free flour
- 1/4 cup frozen peas
- 1/4 cup frozen corn
- 1/2 cup heavy cream or non-dairy
- 32oz vegetable or chicken broth
- 3 – 4 garlic cloves or 1 – 2 tbsp
- 1 tbsp dried thyme
- 1 tbsp dried rosemary
- 1 – 2 tsp red pepper flake
- salt and pepper to taste

How to Make Cozy Crustless Chicken Pot Pie
Makes roughly 6 servings, but who’s counting with a meal this good?
Prepare your space. Burn some incense, light a candle, or simply take a deep breath and center yourself in your kitchen. Focus on the outcome of this meal; it will enhance warmth, love, and even passion if you wish. (My personal example is listed in the recipe.)
You can make this in a slow cooker as well as stovetop. If slow cooking, place chicken into your slow cooker, and top with everything else except for the cornstarch / flour. Give it a little stir and set low 6-8 hours or high 4. When done, take the chicken out and shred it, setting to the side. Stir in a slurry of cornstarch / flour and water to the slow cooker and let heat until thick, about five minutes. Add the chicken back in and mix before serving.

If you want to make this stovetop like I did, here are the directions.
- Grab a large dutch oven or stock pot and add about 1 – 2 tbsp olive oil. Turn the heat on to medium-high and let the oil warm up. When it’s shimmery, the pot is ready.
- Dice up the onion, celery, and carrots to small pieces while your pot heats up. Place them together into the pot so they can cook at the same time.
- When this vegetable mix cooks together in the oil, it’s called soffrito in Italian. I believe in Spanish it also has a similar meaning.
- Add your salt, pepper, and spices / herbs. I usually use about 1/2 tbsp salt and pepper, and wait until taste testing to see if I need more salt.
- Once you do add these, stir them in clockwise and enjoy the amazing aroma. This is a great time to say or think of some words to incorporate your magical intentions.
- With these vegetables and herbs for love and peace / may our family’s bond and love increase / With every bite, love will grow / abundant and strong, wherever we go.

- Once the aroma fills the kitchen – about 5 – 7 minutes with occasional stirring, add the corn starch / flour. Stir to coat.
- Add the broth.
- Add the frozen peas and corn. Stir clockwise.
- Turn heat to high, allowing a boil to start. Let it boil and become thick, occasionally stirring so nothing sticks to the pot. This should only take a few minutes.
- Add the shredded chicken.
- Stir slowly to incorporate the chicken.
- You may need to add a splash or two more broth. This is also a great time to taste test and check if you need anymore seasoning. If you do add more, just stir it all together!
- Serve!
